"Tuna Salad Lettuce Wraps"

Helpings: 1-2 (depending on how hungry you are)

Time to Prepare: 5 minutes

Time to Make: 5 minutes

Ingredients:

  • 2 - 3 oz. packs of Wild Planet Foods Albacore Tuna
  • 1 Tbs. of of Primal Kitchen Foods Mayo
  • 1/2 Tbs. of Primal Kitchen Foods Green Goddess Dressing
  • 1 Tsp. of Dijon Mustard
  • 1/2 chopped large carrot 
  • 1/4 chopped apple (or more if you want more crunch!)
  • 1/4 chopped red onion
  • Some Clover Sprouts if you're feelin' fancy!
  • A head of Butter Lettuce 
  • salt / pepper / garlic powder to taste

Instructions:

  1. In a large bowl, combine your tuna, mayo, Greek Goddess dressing, Dijon Mustard, carrot, apple, onion, and salt&pepper. Mix it all together!
  2. Put a fair serving of tuna in each piece of butter lettuce and hold it like a taco. 
  3. Now NOMMM!!!

Another option: "Tuna Salad-Salad"

Ingredients:

  • 6 - 5 oz. cans of Albacore Tuna from Trader Joes
  • 4 Tbs. of of Primal Kitchen Foods Mayo
  • 1 Tbs. of Primal Kitchen Foods Green Goddess Dressing
  • 1 Tbs. of Trader Joes capers
  • 1/4 chopped red onion
  • Chopped lettuce of your choosing
  • Kosher Dill Pickles (make sure they are Whole30 approved, I get mine from Trader Joes)
  • salt / pepper / garlic powder to taste
  • Balsalmic Vinegar as your dressing (it mixes in with the mayo and becomes a creamy dream)

Instructions:

  1. In a large bowl, combine your tuna, mayo, Greek Goddess dressing, capers, onion, and salt&pepper&garlic powder. Mix it all together!
  2. Scoop it onto your lettuce of choice.
  3. Throw some balsamic vinegar on it.
  4. Use a fork and knife to chop all that goodness together.
  5. Now NOMMM!!!
  6. (I personally like to take a bite of pickle with every bite, but you do you!)
