"Tuna Salad Lettuce Wraps"

Helpings: 1-2 (depending on how hungry you are)

Ingredients:
- 2 - 3 oz. packs of Wild Planet Foods Albacore Tuna
- 1 Tbs. of of Primal Kitchen Foods Mayo
- 1/2 Tbs. of Primal Kitchen Foods Green Goddess Dressing
- 1 Tsp. of Dijon Mustard
- 1/2 chopped large carrot
- 1/4 chopped apple (or more if you want more crunch!)
- 1/4 chopped red onion
- Some Clover Sprouts if you're feelin' fancy!
- A head of Butter Lettuce
- salt / pepper / garlic powder to taste
Instructions:
- In a large bowl, combine your tuna, mayo, Greek Goddess dressing, Dijon Mustard, carrot, apple, onion, and salt&pepper. Mix it all together!
- Put a fair serving of tuna in each piece of butter lettuce and hold it like a taco.
- Now NOMMM!!!
Another option: "Tuna Salad-Salad"
Ingredients:
- 6 - 5 oz. cans of Albacore Tuna from Trader Joes
- 4 Tbs. of of Primal Kitchen Foods Mayo
- 1 Tbs. of Primal Kitchen Foods Green Goddess Dressing
- 1 Tbs. of Trader Joes capers
- 1/4 chopped red onion
- Chopped lettuce of your choosing
- Kosher Dill Pickles (make sure they are Whole30 approved, I get mine from Trader Joes)
- salt / pepper / garlic powder to taste
- Balsalmic Vinegar as your dressing (it mixes in with the mayo and becomes a creamy dream)
Instructions:
- In a large bowl, combine your tuna, mayo, Greek Goddess dressing, capers, onion, and salt&pepper&garlic powder. Mix it all together!
- Scoop it onto your lettuce of choice.
- Throw some balsamic vinegar on it.
- Use a fork and knife to chop all that goodness together.
- Now NOMMM!!!
